Bonita Bay Club’s new Island Cheesecake is a product of collaboration, says Emilia Tomaszycki, Executive Pastry Chef of Bonita Bay Club (Bonita Springs, Fla.).
Tomaszycki tells Club + Resort Chef about the recipe, where the idea originated and what other chefs might learn from it.
Club + Resort Chef (C+RC): What inspired this recipe?
Emilia Tomaszycki (ET): I like to give my employees the opportunity to create new dishes. My employee, Zalika King, originally from Barbados, had come up with a cheesecake bar similar to something I had on a previous menu. We worked on components together, and I came up with the plate up idea, and we brought her dish to life!
C+RC: How would you describe the flavors?
ET: The flavors are very tropical and full of island inspiration.
C+RC: Why is it an important or successful dish?
ET: I believe it is a successful dish based on the makeup and textures of it. This Island Cheesecake has a crunch, cream, color, flavor—and is appealing to the eyes.
C+RC: Do you think other chefs could be inspired by this dish?
ET: I think other chefs can be inspired by this dish to think outside the box. This is taking a basic dessert and giving it a facelift. It helps give new ideas to anyone wanting to play with staple desserts.
