Matthew Marrero, Sous Chef of Bonnie Briar Country Club in Larchmont, N.Y., says members look forward to soft-shell crab season each year. This year, he wanted to try something different.
“I wanted to come up with a soft-shell crab special that used fresh ingredients and was light and delicious,” he says. “BLTs are a staple lunch item, so I thought, ‘Why not add the soft-shell crab on a BLT sandwich?'”
Aside from members’ rave reviews, Marrero says he’s most proud of the simplicity of the dish.
“I think chefs sometimes put too much pressure on themselves, trying to create the most beautiful dish they can,” he says. “I think this could inspire chefs to find beauty in simplicity. You can create a beautiful dish using fresh and simple ingredients that people will love.”
