Colin Moody, CEC, PCII, Executive Chef of The Club at Pasadera in Monterey, Calif., says his ‘everything’ cauliflower recipe—named for the beloved blend of ‘everything’ spice—just so happens to be allergen-friendly. Still, it’s popular among all kinds of members.
“Even though this is a vegan, gluten-free and dairy-free dish, I hate to describe it as such on a menu,” notes Moody. “It’s just good eats.”
“My wife and I couldn’t stop eating it the other night—we totally forgot about the fish and meat that we had grilled,” he adds. “So far the members have been really enjoying it.”
