It is well-known within the pastry team at Chevy Chase (Md.) Club that Executive Pastry Chef, Tracey Hoffer, CWPC, loves chocolate, raspberry, passion fruit and hazelnut all together.
“It is always fun for me to making something well-known, like chocolate mousse, and plate it in a fun, whimsical way that ‘wows’ the diner,” says Hoffer.
Chocolate Mousse & Raspberries is especially popular because of the familiarity of many of the ingredients. Mousse, raspberries and hazelnut are common. The only real unknown is passion fruit, but most diners are adventurous enough to give it a try.
“I’m proud of the colors and textures on this plate,” says Hoffer. “Garnishes do not always have to be intricate. Little details, like foams, gels, fresh fruit or candied nuts, can go a long way to enhance a dish.”
