Ailee Apac, CEC, Restaurant Chef at Cosmos Club in Washington, D.C., sits down with Club + Resort Chef to talk about nursing school, moving to Los Angeles from the Philippines, and joining Cosmos Club in Washington, D.C., where menus are updated often to keep the city club’s culinary-focused members.
“If I get an ingredient or an idea and start writing it down, I have few days [for] R&D, and the next thing you know, it’s live on Monday,” Apac says. “We try to make sure that our menu is curated to the available fresh products. … The [club’s] indoor and the outdoor gardens help with that.”
