Recently, Bonnie Briar Country Club (Larchmont, N.Y.) created a amuse-bouche program on Saturday nights, with creative new concepts each week, like a plantain cup with mango and pineapple salsa and chimichurri sauce.
The dish has a burst of flavors, says Catherine DiQuinzio, the club’s Chef De Cuisine—sweet and spicy from the salsa, herbaceous chimichurri and the neutral plantain—all of which meld together to create a unique and well-balanced yet simple flavor experience for members.
“It’s important to keep our members in mind,” notes DiQuinzio. “This is beneficial for our members because this is made specifically for them and its beneficial for us because we get to showcase our creative side. We truly hope the members enjoy it as much as we enjoy putting it together.”
