The concept of the chef’s table originated from chefs entertaining their family and friends in the kitchen as they worked, usually sitting at a small table tucked away in a corner if space allowed. As time went on, what was once a VIP-only experience eventually evolved into a bookable table for all diners for a behind-the-scenes dinner in the kitchen. A chef’s table is the most coveted table in any dining establishment, and while members come to enjoy the food, they are also coming to enjoy a show and a glimpse of the kitchen life.
Every club is different, but most chef’s tables seat six to eight diners. Many establishments also have minimum and maximum numbers of guests for chef’s tables. For instance, most will not reserve these tables for less than a group of six people if the table seats only eight guests. Most of these tables do not seat more than eight people, as adequate kitchen space for preparing, cooking, plating and serving food is usually needed. A genuine chef’s table usually should be separate from regular dining tables and located inside the kitchen; however, there are other options for a chef’s table experience.
Most dining establishments view counter seating as less desirable and are offered when tables are full, but many are now embracing the new “counter culture” for their chef’s tables in the main dining room. Space considerations can be a reason why many chef’s tables have bar-style seating—it takes up less room than a conventional dining table-and-chair set while still being able to seat eight or even 12 people. A chef’s counter or table makes for an exciting and personal experience, rather than just grabbing something to eat. Suddenly it’s not just a meal, but an interactive show. With multiple courses, a descriptive presentation of each dish, and interacting with chefs and other diners, a chef’s table dinner experience can easily last three to four hours.
A chef’s table experience varies greatly from one club to another, but the experience should always be a memorable one. It’s a dining experience that allows club chefs to show off their culinary skills to members in a more intimate environment and for members to get a behind-the-scenes look into the kitchen.
