Executive Chef Elijah Pulley, CEC, tells C+RC about his time at Northmoor Country Club in Highland Park, Ill., and the challenges and opportunities that came with replacing a beloved chef who’d been in the role for 45 years.
“We decided that there were 100 things we wanted to change,” Pulley says, “but instead of trying to do 100 things at once, we broke it up into 10 small changes. We would do 10 things. Once those 10 things stuck, we would add another 10 things.”
“A lot of people told me I shouldn’t go for the Northmoor job,” Pulley adds. “‘Don’t do it, [they’d said]; he’s been there 45 years.’ But it’s a learning experience; it’s a challenge. When you see those, you should jump on them.”
