Joseph Leonardi, CMC, AAC, Director of Culinary Operations for The Country Club in Brookline, Mass., was recently added to the agenda for the 14th Annual Chef to Chef Conference, which will be held in Miami, March 5-7, 2023.
His presentation, Cooking with Liquid Gold, will guide attendees through developing their own hive-to-table program. He’ll touch on sustainability and recipe development while explaining how club chefs can work with many of the resources already on-property to begin beekeeping and honey harvesting. He’ll offer best culinary practices and show how rewarding an on-property apiary can be for the culinary team and membership.
“I look forward to talking with fellow club chefs about the importance of honeybees and how to use honey throughout their culinary operation,” says Leonardi, who presented at the 2019 Chef to Chef Conference offering tips to motivate and challenge kitchen teams. “I hope attendees will walk away with a roadmap to launch a hive-to-table program at their own club.”
Leonardi is an internationally recognized and award-winning chef who has built his career on education, leadership and integrity. He is also an avid beekeeper. His presentation will be on March 7th at 11:15 AM.
