Logan Christensen, CEC, Executive Chef of Edina Country Club in Edina, Minn., says the inspiration for his Great Lakes Walleye recipe came from growing up in Wisconsin.
In Wisconsin, he says, walleye was a big part of my upbringing. But the R&D for this dish first started when he was trying out for Culinary Team USA in 2021.
“I was working on a dish that brings my cooking style to the forefront,” he says.
He eventually revisited the dish in 2024 when he accepted his current Executive Chef position at Edina Country Club.
“The dish was served at one of the first board dinners here at the club and was very popular,” Christensen notes, “as walleye is a favorite in the state of Minnesota as well.”
