Mario Trujillo caught up with Club + Resort Chef at PlateCraft at the end of 2025 to talk about his first season as Executive Chef of Blowing Rock Club in Blowing Rock, N.C.
“You want to do well, you want you want to impress, you want to implement a program that is a reflection of who you are and where you come from,” says Trujillo. “It’s been great. Challenging—but absolutely wonderful.”
