Attendees of Club + Resort Chef’s PlateCraft, an immersive culinary experience Nov. 3-5 at Cullasaja Club in Highlands, N.C., will learn from some of the industry’s most well-respected culinarians—and earn credit for it.
PlateCraft has been approved for 18 continuing education hours toward the initial or recertification application for American Culinary Federation (ACF) certification. PlateCraft has also been included as an accredited educational opportunity for certification by the Club + Resort Chef Association (CRCA) for the designations of Certified Club Culinary Director and Certified Executive Club Chef.
This year’s program is sponsored by RATIONAL USA and Meat & Livestock Australia (MLA). RATIONAL will showcase how its advanced cooking systems help chefs deliver precision and consistency in the busiest kitchens. MLA will stock the event with premium proteins, including grassfed beef, grainfed beef, wagyu, lamb and goat. Attendees will work with these products throughout the workshop as they shape dishes that highlight both flavor and technique.
Where last year’s theme, The Grand Buffet, highlighted intricate technique and large-format presentation, this year’s theme—Chef’s Table—offers a more intimate and story-driven approach. Each course will reflect the vision of the team behind it, shaped by thoughtful execution and a clear culinary point of view. The experience will culminate in a formal, collaborative dinner where every plate tells a story.
