At the 2023 Chef to Chef Conference, March 5-7 in Miami, Certified Sommelier Elisha Cicerone, CCM, General Manager and Chief Operating Officer of Charlotte City Club in North Carolina, and Scott Craig, WCMC, Executive Chef of Cullasaja Club (Highlands, N.C.), will dive into the secrets and science behind what makes a perfect pairing. The two will share strategies for crafting deliberate and memorable menus that allow the food and drink to enhance the flavor of the other.
“Wine dinners represent the height of our clubs’ dining experiences,” says Craig. “Food and wine selections, portion sizing and coursing are all critical to the success of these events. I’ve enjoyed preparing highly refined wine dinners for many years, and I look forward to sharing the philosophies and techniques which have served me well.”
Craig says attendees will walk away from this session more comfortable with food and wine pairing and wines in general. They’ll understand the process he and Cicerone have employed in clubs for years, and they’ll also gain some fun plating techniques and ingredient ideas to take back to their own operations.
In 2023, the Chef to Chef Conference heads to the InterContinental in Miami, from March 5-7. The 2023 agenda includes eight culinary demonstrations and seven education sessions by many of the industry’s best and brightest chefs and managers, plus a keynote address presented by Patrick O’Connell, Chef and Proprietor of The Inn at Little Washington.
“Events like Chef to Chef are critical to the progression and evolution of our craft and our industry,” says Craig. “The exchange of information and ideas, especially in such a focused, relevant format, is key to our individual and collective success as club and resort chefs.”
