At the 2023 Chef to Chef Conference, March 5-7 in Miami, Certified Sommelier Elisha Cicerone, CCM, General Manager and Chief Operating Officer of Charlotte City Club in North Carolina, and Scott Craig, WCMC, Executive Chef of Cullasaja Club (Highlands, N.C.), will dive into the secrets and science behind what makes a perfect pairing. The two will share strategies for crafting deliberate and memorable menus that allow the food and drink to enhance the flavor of the other.

I’ve enjoyed preparing highly refined wine dinners for many years, and I look forward to sharing the philosophies and techniques which have served me well.”
