Stoking the Fire with Culinary Professional Development

For club & resort chefs, continuing to raise the bar on member expectations, not to mention surprise and delight them, requires a good amount of spark from the culinary team. Keeping that fire lit takes a step away from the grind to be with other chefs, learn about new products, trends and techniques and just cook! Your mates at Australian Beef & Lamb and our “Aussie Meat Academy” are here to help, offering free training events and culinary immersions for fans of beef & lamb.

There’s just no substitute for real, live, and in-person when it comes to professional development and cooking. We recently gathered a group of chefs from private Clubs around the country to Ansley Golf Club in Atlanta with our host Certified Master Chef Kevin Walker, and trend experts from Flavor & the Menu and National Culinary Review magazines…plus all the sustainably raised Australian grassfed beef, wagyu and lamb you’d ever need.

But don’t take our word for it – here’s what some of our new mates had to say after taking part in the event:

Executive Chef Robert Meitzer, CEC, AAC; Forest Lake Club

“That was a cool opportunity to bring different chefs together and into a kitchen,” says Meitzer. “There were some guidelines, but we had a lot of freedom to play around with the product and utilize cuts of beef and lamb that people aren’t as familiar with. Back at the club, we recently did a braised lamb ragu with housemade shell pasta, and it was our most popular action station.”

Executive Chef Lance Cook, WCMC, CEC, CCA , ;Hammock Dunes Club

“Overall the event was awesome,” says Cook. “I had worked with some of these products before, but I didn’t know much about Australian beef & lamb up to that point. I found it to be extremely informational.”

“The pairing into teams was beneficial for me personally,” says Cook. “I had known some of these chefs before, but I hadn’t spent much time with them. This opportunity helped expand my network. Chef Warren and I continue to collaborate and share menu ideas.”
