On Saturday, March 2, 2024, a limited group of Chef to Chef Conference attendees will have the rare opportunity to immerse themselves in exclusive tours of both a wagyu beef ranch and the inner workings of San Antonio Country Club‘s $8 million culinary operation.
Departing from the Austin Marriott Downtown at 10 a.m., attendees will be transported in luxury buses to Landgraf Ranch at Walnut Creek in Red Rock, Texas. Here, Rancher Kenny Landgraff will guide guests through the ranch, providing insights into the intricacies behind raising wagyu and Angus cattle. He will share the ranch’s unwavering commitment to animal welfare, breeding and production.
Attendees will walk away fully educated about wagyu, says Landgraf, including tips for buying for their club kitchens and information on the unique distinctions between different kinds of wagyu beef and the animals it comes from.
The ranch tour will culminate with a lunch featuring Landgraf Ranch’s own wagyu burgers.
“They will have a chance to taste wagyu,” Landgraf says, “but more importantly, they’ll gain insights into Texas wagyu and discover the best practices for integrating wagyu into their culinary operations.”
Afterward, attendees will board the luxury buses and travel to San Antonio Country Club (SACC), where Executive Chef Eduardo Castillo, CEC, and the club’s leadership team will offer an exclusive behind-the-scenes tour of SACC’s impressive $8 million food and beverage operation. To conclude the tour, attendees will savor a lavish feast featuring Texan beef, Texan wines and an array of iconic regional ingredients and cuisines.
Seeing SACC’s operation will be enlightening for attendees, Castillo says. “They will see the SACC operation from the inside, tour our facility, see how we do it—and have the opportunity to ask questions,” he says. “We are also in the middle of a renovation so we can talk about the challenges and opportunities of construction and expansion.”
This exclusive tour, which costs an additional $799, is available to the first 56 registrants who choose to include it as part of their full conference registration. The tour package includes round-trip transportation from Austin to the ranch and club, as well as lunch, dinner and beverages.
