For Hyewon Kwon, Executive Pastry Chef of Boca Raton, Fla.-based Broken Sound Club, ‘Tropical Delight’ is not just any dessert; the fresh and fruity recipe has sentimental meaning.
“This dish was inspired by my move to Miami from my hometown of Daegu, South Korea,” says Kwon. “Miami is where my pastry career began, and I always wanted to make a beautiful dessert showcasing the local, popular ingredients of the city that made my dreams become reality.”
Kwon tells Club + Resort Chef about the signature dessert she says showcases “all of Miami in one bite.”
Club + Resort Chef (C+RC): How would you describe the flavors of this dish?
Hyewon Kwon (HK): The flavors are very fresh and tropical: tangy pineapple, mango compote, piña colada mousse, fluffy coconut lime dacquoise, topped with crispy coconut chips and mango guava sorbet.
C+RC: Why do you believe it is an important or successful dish?
HK: What makes this dish successful is the way all the flavors marry together and create a delicious balance while representing an entire culture all at once.
C+RC: What about this dish makes you most proud?
HK: The ability to represent the city that helped me build my career as a pastry chef with all its local flavors all in one dish.
C+RC: Do you think other chefs could be inspired by this dish?
HK: Absolutely! I hope other chefs or aspiring chefs can read this and reflect back on when and where their careers began and make a dish that represents that special place.
