Recently, River Bend Club in Great Falls, Va., hosted an event hosted by Dlynn Proctor with Fantesca Estate & Winery.
“One of the courses was to be paired with 2018 All Great Things “Duty” red blend,” says Executive Chef Trever Travis. “I knew it would pair well with chicken and waffles, but how could I upscale this well-known dish and put my own personal flair on it? Duck and waffles, perhaps chicken and some type of pancake? How about duck and pancakes?”
Finally, he recalled a faint memory of working with Sir Bernard Ashley of Laura Ashley at the Inn at Perry Cabin in St. Michaels, Md., many years ago.
“I used to make a fluffy corn pancake in one of our dishes,” he says. “I quickly scrambled to my old recipe book, and lo and behold, there it was, a recipe unused for over 25 years. With a special procedure of folding egg whites to ensure a light and fluffy pancake, a new dish slowly developed.”
