“The creamy burrata pairs great with the lobster meat, and a bit of texture is introduced with crispy snap peas and marinated tomatoes,” he says.
Finally, the subtle sweetness of the pea purée and candied lemon zest bring it all together.
“Not only is it a beautiful dish,” Calafell says, “but the contrast of the flavors, colors and textures is wonderful.”
