Vincent Capua’s Latest Dish Showcases Fresh Florida Flavors

The dish by Heritage Bay Golf & Country Club's Executive Chef is refined and approachable.

Vincent Capua, CCC, Executive Chef of Heritage Bay Golf & Country Club in Naples, Fla., says his Key West Pink Shrimp and Asiago Gnocchi recipe was inspired by the region.

“Key West Pink Shrimp are a premium local product with a naturally sweet flavor,” he notes, “making them the perfect centerpiece. I wanted to pair them with pillowy Asiago gnocchi to add richness and comfort, while incorporating vibrant seasonal vegetables and Mediterranean-inspired flavors through the romesco sauce, basil oil, and grilled lemon.”

The result, he says, is a dish that highlights regional ingredients while delivering a memorable dining experience for our members.

Club + Resort Chef (C+RC): How would you describe the flavors and presentation?

Vincent Capua (VC): This dish offers a balance of rich, bright, smoky, and savory flavors. The sweetness of the Key West Pink Shrimp complements the creamy Asiago gnocchi, while the romesco sauce provides a smoky, nutty depth. Confit tomatoes add concentrated sweetness and acidity, charred asparagus contributes freshness and texture, and crispy pancetta delivers a salty crunch. The basil oil and grilled lemon provide aromatic freshness and brightness that tie all the components together.

Visually, the dish is colorful and elegant. The vibrant red romesco sauce contrasts beautifully with the golden shrimp, green asparagus, and bright basil oil, creating a presentation that is both refined and inviting.

C+RC: What makes this a successful dish? What about it makes you most proud?

VC: This dish is successful because every component has a purpose and works harmoniously together. The flavors are balanced, the textures are varied, and the presentation is visually appealing. It showcases technical execution while remaining approachable for our membership.

What makes me most proud is the way the dish highlights high-quality Florida ingredients while demonstrating thoughtful composition. It reflects the standards of our culinary program and showcases the creativity and attention to detail that we strive to bring to every member dining experience.

C+RC: What was member response like?

VC: Member response was overwhelmingly positive. Guests appreciated the use of fresh Key West Pink Shrimp and the unique combination of flavors. Many commented on the balance of richness and freshness throughout the dish, as well as the presentation. The dish generated strong repeat orders during its feature period and received numerous compliments from members who enjoyed both its visual appeal and its flavor profile.
