A World Certified Pastry Chef is a professional pastry chef or baker with specialist knowledge and experience in producing pastry, baking, and dessert products. This individual has a proven track record in managing a pastry section which includes developing people, budgeting and forecasting, and contributing to the implementation of the kitchen revenue plan. They are either employed as a pastry chef (or equivalent) or run their own business and have a minimum of seven years of professional pastry and baking experience, including two years as the head pastry chef.
Applicants for the badge of World Certified Pastry Chef must meet one of three requirements. Applicants have either achieved a performance review rating which has been set by their employer and confirmed as meeting the standards of the Certified Pastry Chef badge, achieved a professional recognition which meets the standards of the Certified Pastry Chef badge, or has prepared and submitted a portfolio of evidence while completing their day-to-day work, which has been assessed as meeting the standards of the Certified Pastry Chef badge.
