With blueberry créme anglaise, lemon curd, peach chantilly and diced strawberries, Cherokee Country Club (Knoxville, Tenn.) Pastry Chef Anna Crumley’s vanilla meringue is inspired by pavlova—with a seasonal twist.
“This dish has a variety of flavors,” says Crumley: “the crunchy, yet marshmallowy meringue, the tangy and sweet lemon curd, the refreshing and fruity peach chantilly, the creamy blueberry anglaise, as well as the sweet and tart flavors of the fresh strawberries.”
Crumley says she’s most proud of the way the individual flavors and textures come together to create a refreshing—and flavorful—dessert.
“This dish was a tasty success because it has the key ingredients of a good dessert: flavors that are exciting, textures that complement each other beautifully, and a good contrast of color.”
