Seth Arnold, Executive Chef, West Chester (Pa.) Golf & Country Club says his Mediterranean halibut with apple and fennel recipe is inspired by sustainable seafood and seasonal cooking.
“This time of year, I really enjoy using vegetables from the brassica family,” he says, “and I find they pair well with apple and fennel.”
Harissa, from Northern Africa, complements the smoked almond and apple in the romesco, a Spanish sauce.
“There’s a nice acidity that pairs well with the leanness of halibut,” Arnold says, “and the couscous and romanesco are lighter accompaniments, even in the winter months.”
Overall, he’s particularly happy with the complementing flavor profiles and the presentation. And the dish, he says, is deceptively simple to execute during dinner service.
“Even though it may look like it has a lot of finesse,” Arnold says, “the recipes are not terribly complex and can be prepped, start to finish, relatively quickly.”
