Bill Paronish, CEC and C+RC 40 Under 40 honoree, recently began his role as Executive Chef of Laurel Valley Golf Club (Ligonier, Pa.), after nearly eight years at the nearby Rolling Rock Club. He says the move was inspired in part by a desire to find a better work-life balance at a seasonal operation.
“I learned a ton [at Rolling Rock Club],” Paronish notes, “and now I can apply that to this new opportunity.”
Paronish credits his participation in the inaugural PlateCraft event at Cullasaja Club last November for inspiring him both to prioritize his personal life while also continuing to hone his craft.
“[PlateCraft] was [about] diving deeper into the things we do on a daily basis, but perfecting it,” Paronish says. “That was the biggest thing I took away from PlateCraft, and it helped me a lot. I came away from it excited, too, and tried to instill a lot of [those lessons] in my staff.”
Paronish’s next goals include building a successful culinary operation at Laurel Valley GC and becoming a Certified Club Culinary Director (CCCD) through the Club + Resort Chef Association (CRCA).
