As he nears the two-year mark as Director of Culinary at Palmetto Bluff Club (Bluffton, S.C.), Rhy Waddington, formerly of Winged Foot Golf Club (Mamaroneck, N.Y.), opens up about his career journey to this unique club, where $11 million in annual food and beverage revenue sets the stage for unique challenges and opportunities.
He outlines plans for expansion, including constructing a central commissary kitchen, while emphasizing the importance of effective communication and teamwork in managing multiple restaurants.
He also addresses staffing issues caused by rising living costs and the club’s various solutions, like purchasing a hotel and turning it into employee housing, to offset those issues.
