Jacksonville G&CC’s Executive Chef built the ultimate setting for a private chef’s table member event.
Club chefs are masters at creative displays and dining events. Many go to great lengths, building specialty props or sourcing specific ingredients, to create a unique and special experience for members.
Jacksonville Golf & Country Club’s Executive Chef Mike Ramsey is no exception.
“Creativity is one of Chef’s strongest characteristics,” says Paul Craven, General Manager. “He also has this handyman-meets-engineer quality that he uses to a high degree, allowing him to put things on display in the most unusual and interesting ways.”
For a recent Game of Thrones-themed chef’s table, Ramsey pulled out all the stops building an “Iron Throne” and a “Fire & Ice” table complete with an eight-foot rotisserie spit.
“I am a big fan of the under-promise/over-deliver philosophy,” says Ramsey. “If someone asked me to do all this, I would probably have a good laugh and say no. But I’m inspired by building something that will absolutely blow their minds and expectations.
“I work with a creative, hardworking team that shares my philosophy,” he continues. “I often bite off more than I should try to chew, but we get it done. We have a lot of good chefs and a lot of good food in our city. Adding this extra flair can help to set us apart.”
