When The Union League of Philadelphia purchased the Liberty Hill location in 2021, its largest acquisition to date, Executive Chef Denny Santiago and Executive Sous Chef James Gallagher were brought over to run its culinary operation.
In 2022, Liberty Hill opened its second restaurant, Marquis By Denny Santiago, which the Executive Chef describes as elegant yet approachable, with global influences.
While a namesake restaurant is an incredible milestone for any chef, Santiago quickly gives credit where it’s due.
“When I look at that name,” he says, “I see James Gallagher. … I see his mom’s name, my mom, my father—anybody who’s kind and works hard.”
