This year’s cookbook, a creative offspring of the inaugural PlateCraft event, showcases a collection of recipes that epitomize the growth and innovation at the heart of club culinary.
In early November 2023, Cullasaja Club in Highlands, N.C., became the stage for PlateCraft, offering an exclusive group of club chefs a unique, three-day, immersive workshop (pictured below). Led by some of the industry’s most esteemed chefs, PlateCraft evolved into a thinktank of creativity, knowledge and culinary exploration. The attendees left not only rejuvenated and inspired but also equipped with new skills to enhance their kitchen operations and menus.
After the event, we invited these chefs to contribute a recipe that showcased the most impactful lessons and techniques acquired at PlateCraft. The resulting compilation in this cookbook, available in print and extended digital formats, is an embodiment of the educational and collaborative spirit of the event.
