Attendees of Club + Resort Chef’s inaugural PlateCraft, an immersive, two-day Chef to Chef experience that will kick off on November 5th at Cullasaja Club in Highlands, N.C., will learn from some of the industry’s most well-respected culinarians—and get credit for it.
#PlateCraft has been approved for 15 continuing education hours toward the initial or recertification application for American Culinary Federation (ACF) certification. PlateCraft has also been included as an accredited educational opportunity for certification by the Club + Resort Chef Association (CRCA) for the designations of Certified Club Culinary Director and Certified Executive Club Chef.

The PlateCraft agenda features a dynamic range of advanced culinary workshops and education sessions. The agenda includes sessions on beef fabrication, dry aging and fermentation techniques, advanced garnishes and plating, protein bonding, sous vide cooking, food photography, cocktail infusions and mousseline production. Additionally, attendees will tour Wildcat Cliffs and Highlands Country Club and indulge in immersive dining experiences.
