Registration is now open for Club + Resort Chef’s inaugural PlateCraft, an immersive, two-day Chef to Chef experience. The event will occur at Cullasaja Club in Highlands, N.C., from November 5-7, 2023. This carefully selected venue sets the stage for an unforgettable gathering where club chefs can participate in a range of advanced culinary workshops and education sessions. These agendas includes sessions on beef fabrication, dry aging and fermentation techniques, advanced garnishes and plating, protein bonding, sous vide cooking, and mousseline production. Additionally, attendees will tour Wildcat Cliffs and Highlands Country Club and indulge in immersive dining experiences.

PlateCraft will kick off with a live butchery demonstration conducted by a Ph.D. meat scientist, followed by an opening reception and dinner at Canyon Kitchen, one of the most beautiful restaurant settings in the country, framed by verdant forests and meadows, encircled by thousand-foot granite cliffs.
On Monday, PlateCraft will feature both education sessions and hands-on workshops led by Scott Craig, CEC, CCA, WCMC, Executive Chef of Cullasaja Club (Highlands, N.C.); Richard Brumm, CEC, WCEC, CCA, AAC, Director of Culinary Operations and Executive Chef of Bonita Bay Club (Bonita Springs, Fla.); and Geo Lanez, MBA, CEC, Executive Chef of The Patterson Club (Fairfield, Conn.).
In the evening, attendees will embark on a tour of Highlands Country Club with Executive Chef Angel Herrera, followed by an Appalachian-themed dining experience at Cullasaja Club catered by local restauranteurs, farms and chefs, including Highlands Smokehouse, Eideweiss, Cullasaja Club and others.
On Tuesday, after a morning education session on plating and photography, attendees will tour Wildcat Cliffs Country Club, where Executive Chef Will Bystrzycki will guide attendees through a behind-the-scenes, immersive tour of the club’s kitchen and dining spaces. PlateCraft will conclude shortly after lunch on Tuesday.
PlateCraft is designed to be an all-inclusive program for attendees with meals, accommodations and education materials included in the registration cost.*
*Although transportation to and from the airport is not covered by the registration fee, event planners are actively exploring ride-share options for attendees and will host a pre-conference logistics call to finalize these details.
